Day 5...gaining control!

Welcome back! Today was a much better day!! I woke up early and prepared my breakfast before the kids woke up. It was great! Lunch was prepared before I took a shower and enjoyed AT LUNCH TIME!! Dinner was yummy...except the miso soup. It had seaweed...and I will leave it out next time!! Preparing for a weekend away...eek!!

Breakfast, rice cereal and fruit & toasted walnuts! Loved it!!




Lunch--quinoa salad (eh...) and hummus and raw veggies. Enjoyed the veggies!! Surprise!!!





Dinner: stir fry veggies (ummy again!!), miso soup (blah) and brown rice! Yay! Forgot the pic because I was starved! Ha! I LOVE stir fry veggies! I will cook them the rest of my life! Ha!!!

Day 4...bad day!

Today started off amazing. Felt great, slept well (other than waking up with asthmatic Cole). I didn't wash dishes last night, so I had to do that. then breakfast was YUMMY! Kids and I LOVED IT! Fresh fruit and yogurt! The fruit was so delicious and I think it was because I hadn't had sweets in a few days. The flavors were awesome and I felt like that's how God intended us to experience fruit. I imagine natives of any place on earth getting a taste of a fresh peach or strawberry...how great it must have been!



Then I had to get ready for a photo shoot at Justin's store...article about us meeting at United. No time for lunch before...so I didn't even have lunch ready until 4:30. it was the nori rolls. Blah! I'm not a sushi fan...and I couldn't do the seaweed! I tried! I ended up dumping the contents and eating without the wrap. The lentil lime salad wasn't ready, so I never ate it! Not a happy camper. I washed dishes and basically had to get ready for supper. (no pic...it was ugly!)

Supper was great though (Justin came home from work and offered kid support...so glad because they were driving me crazy!). Stir fry veggies in coconut oil (love it!), quinoa (great!) and cucumber tomato salad (red wine vinegar & balsamic vinegar mix).



Needless to say I'm glad today is over! Stressful day, prep time is killing me!!! I will survive though. I've learned that you should really prep at the beginning of the week. This hasn't been possible because we've been out of town so often...but I will for next week! I'm going to set out everything I need for breakfast tomorrow morning!! Goodnight!

Day 3...my first oops day!

Day 3 started off great! 2 eggs, toast, and steamed kale. Fabulous! I also felt really good! Then...I got behind. My friend and her sweet 4 month old came to visit and I forgot to take my lunchtime supplements! I made a micro green salad for me and a Greek salad for her...and as I sat down I realized I forgot to do the supplements. Oh well, I though! I'll just pick back up at the next supplement. I forgot...again! Luckily I remembered before we headed to dinner. I was SUPPOSED to make nori rolls for dinner and take them with us to eat on the way. Instead I played with the baby! Ha! Actually...I just let time slip away. Sooooo I decided I would try my hand at ordering at a restaurant. The restaurant is THE BEST Mexican food p,ace in Vernon (only?). Anyway, I ordered a salad with pinto beans, tomatoes and avocado. They don't really specialize in salad...obviously, because it was the size of a d
Side salad with shredded lettuce, a WHOLE avocado (skinned and cut in half) and like 5 prices of diced tomato...and 1/4 cup or less of pinto beans. Mi topped with some salsa and actually enjoyed it. No chips, no queso...just my salad (and one teeny tiny useless bite of fajita chicken). I only ate about 1/2 or less of the avocado. Sooo...I was still hungry. When I got home I did a snack of tropical Shakeology with water and strawberries. Did the trick! Only one pic today!! So sorry!!!

Ultimate reset day 2

Today was a great day! The food all day was fabulous and I've felt pretty darn good! I weighed myself this morning...and I lost 2lbs! Now my intention at all! Oh well...I'm giving it a few days before I add a lot more food. (although...those wanting to lose weight...this program WILL help you!). Tomorrow will be the big test. Birthday party at the best restaurant in Vernon. Sighhhhhh....I'm going to take my supper and eat it on the way and then have a salad there. :). (and did I mention we go out of town this weekend?)

Now for the food!

HUGE breakfast!! 1 cup oatmeal, 1 cup blueberries (split between 2) and 1/2 cup yogurt. It was awesome! I put a little honey in the yogurt, but that was the only sweetener!



Greek salad. This was also awesome! Romaine heart, English cucumber, Roma tomato, kalabasa olives (yummy!), Greek dressing & left over chicken breast! (3-4oz). Topped with Greek salad dressing and toasted pine nuts.



Awesome, awesome meal! (I messed up the beans...they got mushed...oh well!). Brown rice (no flavoring), black beans with seasoning, 1/4 cup guacamole (yesssss), 2 tbsp salsa, 1 corn tortilla, steamed kale with lemon, himalayan salt & toasted pine nuts! It was great!!



Tomorrows meals will be a repeat basically of day 1, except for the dinner. nori rolls. Eek! Thanks for reading! Keep my knee in your prayers...it's still killing me!

Ultimate reset day 1

Today was the first day! I was nervous! I mean...I have a fridge and cabinets full of foods I NEVER eat.
First meal was eggs, 2 slices Ezekial toast, and steamed spinach. It was GREAT!



Next was a micro green salad. It had all sorts of veggies and a FABULOUS homemade creamy garlic salad dressing. I'm not a HUGE veggie fan...but it was one of the better salads I've ever had! I did leave some bell pepper though...I don't do raw bell pepper....but I did have most!



Dinner was AWESOMENESS! It was supposed to be salmon, but united was out...and I don't do Walmart (ok...I checked...they didn't have any either! Ha!). Soooo...I subbed chicken breast (need some for tomorrow's lunch...so why not?). It marinated in a yummy EVOO mixture with garlic, lemon, parsley and basil. WOW! The asparagus was steamed and we added salt, pepper and lemon...yummy! The baby potatoes were just boiled! It was very filling and honestly felt restaurant quality!




I feel fine! Not like I want to go run a marathon with tons of energy...but also not tired. I feel pretty normal! (I do miss my chocolate shake...so that will take a while to cure that craving!). There are some different supplements...but nothing t

I have realized that I graze a LOT! Cheerios when feeding Katy, part ofmcoles grilled cheese, cacao nibs when I pass by the cabinet, special k cereal handful. I never realized it! I've been PERFECT today! No cheating. :). 1 day down 20 left!

Beachbody Ultimate Reset

Hi!  Long time no post!  I'm back...with a VENGEANCE!  ha!

So let me fill you in on what I've been up to!  In June Justin and I went to Last Vegas NV for Beachbody's Coach Summit.  This is essentially a gathering of all the coaches in the nation.  I qualified for the 5 year birthday party on the first night...and it was incredible!  AWESOME food, fun and fireworks!  All at the MGM Grand pools.  It was incredible!  We also worked out with Chalene Johnson (turbo fire/turbo jam/chalean extreme), Tony Horton (p90x, power 90, 10 minute trainer) and did the world's largest workout on the LV strip.  We met Tony Horton as well.  AWESOME trip.  WE  topped it off with bike riding also!  We did a 14 mile trip outside of Vegas (red rock canyon) that was awesome...but nothing compared to riding and being at the grand canyon.  That was so...humbling...is the only word i can say.  God is the most wonderful artist and architect!

So, now to what I'm doing now.  A few weeks ago I rode a 50 mile bike ride and then a few days later got certified in Turbo Kick.  (all day training)  My knee pain came back BAD.  I knew I needed time off, so I decided to 3 weeks off...and while off I am doing the Beachbody Ultimate Reset.  It is a detox program meant to bring your body back to working the way it should.  more energy, weight loss, cholestoral drops, general Increase in the quality of life.  I'm not wanting to lose weight, but I could always benefit from more energy (although my shakes give me GREAT energy!  ha!) and also...I want the proper nutrition to help promote bone growth and healing for my injury (deep bone bruise at the knee joint).  This program takes you through 21 days of HEALTHY eating...and its a LOT of food!
